Salary $75,000.00; 1 bedroom unit in A Cove complex; 10 days vacation; one way air fare; relocation allowance up to $3K USD; 50% discount on F&B and duty meals;high volume high end pastry experience a MUST; you must have in depth varied culinary experience including North American and international cuisine
Expenses:  Medicals, X-Rays, Police Reports, Notarizing documents etc. would be at the expense of the candidate

  • Nationalities:  USA, Canada, UK, Caribbean, Australian, South African, European.  Current combination of Indian, Sri Lankan, Canadian, South African, Mexican, Chinese, Nepal etc.
  • Marital statusDue to Immigration and other challenges, single candidates are best suited to these positions.  Currently our married colleagues with or without dependents choose to not relocate them
  • Age range:  current chefs range in age from mid thirties to mid fifties; our main expectation is that the successful candidates are qualified, experienced, able and energetic!

JOB DESCRIPTION
Exceptional service and cuisine are hallmarks of our Hotel's CLIENT's dining experience. As Executive Pastry Chef, your leadership, creativity and culinary skills will inspire your team to create spectacular desserts that bring every meal to a memorable (and delectable) end.
Hotel Overview:  Reigning from atop Bermuda's highest point, over a majestic 100 acre estate, The hotel is located on the southern shore of Bermuda. The hotel has been the island's premier luxury resort since its opening in 1972 and is regarded as a leader in the hospitality industry on the island
Summary of Responsibilities:
Reporting to the Executive Chef, responsibilities and essential job functions include but are not limited to the following:             
Leading and managing the quality and quantity of the Pastry department, and coordinate the production for banquet and restaurant functions
Developing new dessert, pastry and bread products; including recipes
Maintaining payroll costs and productivity within budgeted guidelines; includes preparing team duty schedules
Maintaining an effective inventory process
Assisting with the recruitment, training and development of all Pastry Chefs; including performance management
Participating in and/or leading colleague meetings
Preparing various reports and related documentation
Balancing operational, administrative and colleague needs
Following all policies, procedures and service standards as well as health, safety and sanitation policies
Other related duties as assigned
Qualifications
A Diploma or Certificate from an accredited culinary school required
7 years’ experience working in all areas of a large hotel kitchen
5 years senior leadership experience in a Pastry Department within a luxury hotel setting which is unionized preferred
Working knowledge of sugar work/chocolate skills
Financial management skills and a proven record to effectively manage resources
Proven ability to recruiting, managing, training and developing a large team
Exceptional leadership, management and creative skills
Essential skills include:  customer service, communication (verbal and written – excellent English), strong interpersonal, team, multi-tasking, problem solving and financial management
Must be accountable
Ability to consistently perform effectively and cohesively under pressure in a fast paced multi-cultural environment as part of a team
Ability to learn related computerized systems
Proficiency with Microsoft Office suite applications is required
Schedule:  Must be willing to work split shifts, evenings, weekends and holidays as required.
